The spectacular old-world charm and warmth of the Greek island of Crete is now in the heart of the Village at Blue. From the owners/operators of the Blue Mountain famous Fire Hall Pizza comes Tholos Restaurant. Owner and designer, Bill Vomvolakis was inspired by a restaurant in his native Crete. Tholos, a Greek-Mediterranean restaurant, equals part exquisite Mediterranean cuisine and visual excitement. Tholos will feature live weekend entertainment, with a variety of 2-4 piece performers, including, but not limited to, Greek Bouzouki and Guitar, Latin music, and the always-popular Belly dancing performances.
Birch & Co. Zoot Alors!, a hip fashion-forward women’s clothing and accessories boutique, has arrived--bringing bold, provocative fashion design to the Village. Catering to a higher end market with European, Canadian and L.A. couture, Birch & Co. Zoot Alors! is for women who want to stand out and be acknowledged for their intriguing attire. The boutique will showcase an extensive line of edgy clothing, unique jewelry, gorgeous handbags and belts, and shoes so fierce they’ll dance out of the store on their own.
Much more than another bar, a new hallmark in style and atmosphere is opening in the Village at Blue. Twist Martini & Wine Lounge will offer a sophisticated rustic chic look with a view of the open kitchen. Connoisseurs will be gratified to know that Twist’s bar boasts over 20 kinds of vodka chilled to -10 degrees Celsius in a display freezer and expert bartenders to serve up the region’s largest selection of specialty martinis and a 50-plus bottled wine selection (with more than 12 offered by the glass!) The internationally inspired small plate tapas-style menu meant for sharing will be a hit with friends. A kids’ menu will also be available.

The chef and owner, renowned radio and television personality Jeff Suddaby, believes that expanding his successful Huntsville eatery, 3 Guys and a Stove, into Mosaïc at Blue is a perfect fit. “The market at our original Huntsville location is similar to the Village,” he says: “Diners with an active lifestyle who want a higher quality of dining but don’t want to get dressed up to enjoy it. You can come in with shorts in the summer or ski gear in the winter. 3 Guys is a place you can come back to day after day, where you know you can relax.” The menu takes simple foods from around the world and adds a twist. For example, the cabbage rolls are made with ground lamb. Sudabby also aims for multilevel flavour and seasoning. In his celebrated television and radio programs and cookbook, he focuses on cooking for those with an active and busy lifestyle and aims to take the “chore” out of cooking and make it enjoyable.
